Princess Bex's Onde Onde Recipe

Hey all,

Due to lotsa FB inbox messages I received yesterday asking for this recipe, I jot down below the process and it might be different or similar to what you've heard or seen ^_^

Ingredients:
a. 350 gm glutinous flour (Tepung Pulut)
b. 2 blocks of Palm Sugar (Gula Melaka).  Chop it like cube dice style. If you don't have Palm Sugar, can substitute with brown sugar or sugar
c. 1 teaspoon vanilla essence
d. 1 drop of green color (optional)
e. 100 ml water or more/less
f. Fresh grated coconut 

Process:
a. In a pot, boil water.  Use 500 - 1000 ml of water.  
b. Combine flour, vanilla essence and green color.  Mix until it become dough.  Take a small dough like 20 cents shape, make it flat and insert the cube palm sugar or other kind sugar.  Shape it round.  This portion can make 15 to 20 pcs but depending your size of dough
c. Put all dough in the boiling water.  It will float and this means your dough is cooked.
d. Garnish it with grated coconut and your kuih will be ready!

It's so easy peasy rite!  Managed to make 10 pieces of big one and hubby ate 8 pieces of them.  Must be delicious enough hahaha... Happy trying! :)

Recipe Box: Sugary Cookies

For today's recipe box, I will share this quick and simple recipe yet good one!  This time, we go for cookies yeay!

Ingredients:
300gm plain flour
1 tsp baking soda
1/2 tsp baking powder
120gm unsalted butter, room temperature not melted 
250gm castor sugar
1 no egg
1 tbsp vanilla essence
30gm snow powder or cocoa powder mix with icing sugar

Preheat oven to 375 degrees F
Mix flour, baking soda and baking powder and set aside.  Always, sift these powder
Beat butter and sugar till smooth.  Then, fold in the egg and vanilla essence, mix well
Slowly, fold in the mixed flour until it become dough.  Here, you can shape your dough into round, flower or other shapes.  Can use shape cutter for design consistency
Bake for 8 to 10 mins, if it's a big cookie, bake up to 15 mins
Cool on the wire racks and can sprinkle the snow powder or mixed cocoa onto the cookies

Recipe Box: Butter Cake

Yummy!  

Who doesn't love butter cake or butter cookies? Me loving it!  This cake is our all time favorite.  It is delicious to be eaten with or without the buttercream icing. The cake is easy to prepare and the ingredient is accessible in supermarket.  Here goes the recipe!

Ingredients:

a) Cake
250gm butter, unsalted and melted
200gm castor sugar
4 nos eggs
300gm plain flour
2 1/2 tsp baking powder

b) Frosting 
200gm butter, unsalted and melted
180gm icing sugar
1 tsp vanilla essence
1 - 2 tbsp fresh milk

Beat butter and sugar till light and fluffy.  Mix in one by one the eggs.  Fold in the flour and baking powder and mix well.  Grease the 8 inches round pan with butter and a little bit flour, pour in the batter and bake for 30 - 35 minutes with baking temperature 350 F.

For the frosting, beat the butter, icing sugar, vanilla essence and fresh milk till well blended

The above cake is without buttercream frosting

Recipe Box: Steamed Yogurt Cake

It's Monday blues today and it's our 1st year engagement anniversary...yey!

Ok, did you guys try baking the chocolate chip cupcake?  Well, I have another great baking recipe to be shared today; Steamed Yogurt Cake :)

Ingredients:
200gm unsalted butter, melted
180gm castor sugar
3 nos eggs
225gm all purpose flour
1 tsp baking powder
1 tsp soda bicarbonate
220gm plain yogurt
1 tsp vanilla extract
1 tsp almond extract

Beat the butter and sugar till light and fluffy then add the eggs, beat again.  Add together the flour, baking powder and soda bicarbonate.  Put aside.  Mix the plain yogurt with the vanilla and almond extract.  Then, fold in together the yogurt into the mixed flour. Pour into an 8 inches round tray and steam the batter for 1 hour. For the topping, it can be a buttercream, fresh cream or cream cheese :)

Toppings are fresh cream with dust of cocoa
It's a healthy cake and surely 1 piece is not enough! :) Give it a try!

Recipe Box: Chocolate Chip Cupcakes

When it comes to baking, shopping of the ingredients always be my favorite part. At the moment, I only go to these 2 stores; Bake With Me at Lintas or Putatan and Consfood at Damai or Taman Yakim Jaya.  I can spend 1 - 2 hours just to see what's in the store and of course to buy my list of things

My dearest and I went to Consfood at Taman Yakim Jaya last Saturday to buy ingredients for my Chap Goh Mei cake. Entering the store with the centralized full blast of aircond and nice aroma of various baking ingredients, makes me wanna stay there longer lol!  You see baking is already inside me!!! 

Thus, I have decided to share some recipes to all of you and will post it every Monday.  All recipes will be taken from my book collections, Internet or my own recipes.  For starting, I will share The Chocolate Chips Cupcakes recipe:)  

Ingredients:
1/2 cup butter (room temperature)
1/2 cup castor sugar
2 large eggs
3/4 cup self - raising flour
1/2 cup chocolate chips

Preheat the oven to 375F/190C.  Insert 8 cupcake cases into cupcakes pan
Put the butter, sugar, eggs and flour in a large bowl and using a handheld electric mixer, beat together until just smooth.  Fold in the chocolate chips and spoon the batter into the cases
Bake the cupcakes in the preheated oven for 20 - 25 minutes or until well risen and golden brown.  Transfer to a wire rack to cool
