My First Steamed Blueberry Cheesecake

Woah am back in track! I mean baking track :)

For last two weeks, I had been baking and seriously it was a GREAT feeling! Hah, talking about stress reliever here...

I have always wanted to try something different in baking cheesecakes, you know, usually the process is either water bath baked or chilled one.  But, steaming cheesecake?  Curiosity got the better of me and why not I give it a try then...

Steamed Blueberry Cheesecake (I got the recipe from Suzette Cooks)

Ingredients:
01. 500gm cream cheese ( I love to use Anchor brand)
02. 100gm castor sugar
03. 1 1/2 tsp Vanilla essence
04. 200ml Whipping Cream (another Anchor brand)
04. 4 nos eggs
05. 300gm Blueberry filling 
06. 1 tbsp lemon juice

Method:
01. Cream cheese and sugar till smooth
02. Fold in eggs, Vanilla essence and whipping cream.  Mix till smooth 
03. Pour into 8 inches round or square cake tin
04. Pour the Blueberry filing in pan and add in the lemon juice.  Stir together about a minute.  Pour half of the  filling into the cheese mixture, stir with a chopstick to create marble effect.  Reserve the other half of jam as topping decor
05. Steam the mixture for 2 hours under low heat (after water is boiled)



06. To avoid water sipping in, cling wrap the cake tin 3 times tightly.  And hubby did a good job in this, thanks dear :*
07. Cake is cooked, if the surface is firm to touch and shrink from the sides
08. After cooled, chill in the fridge for at least 1/2 hour before decorating.  I let it chilled for 3 hours
09. For the decor, just spread the half filling on top of the cake and I chilled it again till the next day


Tadaa... Your cheesecake is ready to be eaten.  My verdict?  It's creamy and with the perfect combo of cheese and blueberry makes you wanna eat more! LOL!  For me the first part of the process is easy and ingredients pun accessible.  Only the part you need to cling wrap and steam take time but worth it!

Working Wife Found Her Helper

Selamat Hari Raya and happy holidays all!!!  

Well, I started my Raya holidays since last Friday.  Stayed back at office till 7.00pm to finish all pending works, went out for dinner and bought one great deal of cooker! So, you may ask what type of cooker?  It is a Thermal Wonder Cooker by La Gourmet :)  Actually, it was introduced by my SIL Caneeliea, hop to her blog and read an interesting facts about this cooker.  

Ok, apart from staying late at office for work, I also did some recipes printing for me to try and cook using this cooker.  Other than rice, soup and pasta, you can also cook cake/dessert inside this thermal cooker!  Nice kan? So, my first experiment was Chocolate Cake.  The result? Yummy!!! But, I forgot to take photo of the cake and the portion was so little and might have to double up the ingredients next time.  It took seven hours to cook after I steamed the cake for 35 minutes.

I also bought one for my mum since they are now into soupy meals and enthusiastically explained to her how this thing works lol!  My second recipe for this week is Pork Peanut Soup, hubby's fav meals.  So, I cooked 15 minutes on the stove and let it rest for 8 hours and the result?  Clear soup, tender meat, the taste is just right and hubby loves it very very very much!

It's worth buying and a great helper; save your gas, electricity and most importantly your energy and I will be happy when I reached home the dinner is served!

The Wife's Cooking 2

So much of cooking activities for me this month; from dishes to cakes :)  Cooking and baking? Yeah, that's my life now.  Ok, pixies time! 

Note: There'll be lotsa foodie pixies

a)  Shui Jiao with chicken broth soup
I was browsing CathJ website and saw her wonton dumplings (yummy), so brought hubby to mini market at Bornion to buy the ingredients
Verdict:  It supposed to be wonton but the skin dumplings; thick and wide, so ended up cooking Shui Jiao.  I am not satisfied with the filling, I should use less corn flour next time


b) Nasi Briyani with side dishes; Deep Fry Spicy Chicken Wings and Vege
Nope, I didn't do the Briyani from the scratch (hehehe), I used Briyani Paste (I forgot the brand) at Sunny Supermarket
Verdict:  Next time, I will put raisins and bunga cengkih for more aroma!


c) Citrus Ice Cream
I modified Nigella's recipe actually and much more simplified.  Love the citrus smell and taste!
Verdict:  My fresh squeezed orange was sweet a bit and I forgot to taste it before mixing into the cream.  So, the ice cream a bit sweet and less sour.  The lime didn't work since I only put 3 pieces     


d) Chicken Lihing Soup
Love this and gonna cook again!


e) Sweet Egg Tarts
First time baking using oven.  I have difficulties when using the oven.  Bah, all this time I'm baking cake in steaming process
Verdict:  With 350gm of flour, I can bake 5 dozen of tarts.  But, the first 3 batches were over cooked and even not cooked.  Am not sure how these thing can happen because I followed the instructions on the book!  Again, I remember CathJ baking tart process and baked it accordingly.  Viola!  Alas! Thanks Cath :)


f) Nasi Tomat with side dish; Ayam Kurma
Yes, the tomatoes rice I cooked it from the scratch and the dish I used Adabi Kurma paste 


g) Orange Madeira Cake
It's just an ordinary cake with a taste of orange juice and zest! 
Verdict:  I love the cake texture! And the baking process is easy to follow and understand :)


I received calls from my families and friends ordering Fruit Cakes for Christmas.  Wow, it is 1 month and 4 days before the joyous celebration.  We will come out with special ads for this

The Wife's Cooking

Being a homemaker at the moment, gives me more time to prepare food; lunch or dinner for dearest hubby.  Not to forget tea break or supper (jarang sikit lah ni) also.  According to hubby, I actually take my time to prepare the food, for instance, when we just got back from jalan - jalan, I decided to cook something for us which involves lotsa process.  

When I was in secondary school and university, cooking is the least thing that I would do, with the homeworks and assignments duhhh.... plus my mum is a great cook and no one in the families can lawan her cookings.  See? hehehe...

And after being married for 3 months, I can say, I upgrade sikit my cooking skills and hubby likes it very much.  Pixies time!

a) Tea Break Menu

Sweet Potato in Coconut Milk and Kuih Lecek Ubi Kayu
French Toast and Chicken Boxing
b) Lunch and Dinner Menu

 Beef Sausages with Long Beans and Boiled Slice Pork (non halal)
Omelette, Deep Fry Chicky Wings and Vege with Chung Ken (non halal)
Sawi with prawn and Steamed Egg with Minced Pork (non halal)
Vege with Chung Ken (non halal) and Sweet & Sour Home Made Pork Ball (non halal)
and last night was making my second time appetizer - Hinava 

Oooohhh....
Well, the dishes for home cooking but still we both love it very much and next time wanna try the famous Julia Child's recipe - Boeuf Bourguignon perhaps Christmas?
